Development Of Appropriate Packaging For Shelf Life Extension Of Smoked Fish In A Developing Economy, Michael Ayodele Omodara

Michael Ayodele Omodara

Three composite packaging materials; Paper-Polyethylene (PaPe,), Polyethylene-Paper (PePa) Polyethylene-Paper Polyethylene (PePaPe) were developed for packaging of dried fish samples with Polyethylene used as control. Some engineering properties (thickness, water and oil absorption rates) were determined using standard methods. Smoked dried catfish were stored in the three composite packing materials and in polyethylene for six months. The composite materials’thicknesses ranged from 0.23 to 0.31 mm while that of control was 0.27 mm. The water and oil absorption rates ranged from 1.73 to 10.00 g/cm2/min and 2.50 to 10.86 g/cm2/min ...

Effects Of Pre-Treatments And Drying Temperatures On The Drying Rate And Qualityof African Catfish (Claris Gariepinus), Michael Ayodele Omodara, Adesoji Matthew Olaniyan

Effects of pre-treatments and drying temperatures on the drying rate and the quality of African Catfish Clarias gariepinus was examined by drying samples of catfish under four different temperatures (40 0C, 45 0C, 50 0C and 55 0C) and four different pre-treatment methods (Salting, Sugaring, Blanching, and Control) using an experimental dryer. Drying of the fish samples for all the pre-treatments at 40 0C to 55 0C occurred in the falling rate period only showing that the predominant mechanism of mass transfer in drying process of catfish is that of internal mass transfer. The drying rate increases with increase in ...
