Solubility And Dispersion Viscosity Of Soy Protein Isolates As Influenced By Ph And Sucrose In Model And Food Systems, Carl Juandoo Dec 1980

Solubility And Dispersion Viscosity Of Soy Protein Isolates As Influenced By Ph And Sucrose In Model And Food Systems, Carl Juandoo

Doctoral Dissertations

Three commercial soy isolates, Pro Fam S-970, Promine F and Supro 710, were studied. Part A involved the investigation of protein solubility and dispersion viscosity of the isolates in simple models at 3°C at pH levels of 3.8,3.3 and 2.8, attained by additions of citric acid solution. The effects of addition of sucrose at varying levels on solubility and dispersion viscosity of the isolates at the given pH levels were studied also. In Part B the findings of Part A were applied to functional performance of the isolate Supro 710 in a food system. A ...

Functional Properties Of Soy Protein Concentrates And Functional, Nutritional And Sensory Properties Of A Corn-Soy Concentrate Cereal As Influenced By Selected Calcium Salts, Charlene James

Doctoral Dissertations

The substitution of soy protein concentrates for soy flour in a USDA formulation for corn-soy blend and fortification with four calcium salts were investigated by functional, nutritional and preliminary sensory evaluations. A model system was used in an investigation of water absorption and Brookfield consistency of 4 soy concentrates, 2 powders and 2 grits, in the presence of calcium carbonate, calcium phosphate dibasic, calcium phosphate tribasic and calcium lactate, at levels of 0, 400, 800 and 1200 mg calcium/23.4 g concentrate and at 0 0 ambient temperature (22-25° C) and 50° C. One powder and one grit concentrate ...

Consumer Assessment Of Residential Energy Conserving Innovation, Margaret Bateman Ellison Aug 1980

Consumer Assessment Of Residential Energy Conserving Innovation, Margaret Bateman Ellison

Doctoral Dissertations

This research is the product of the researcher's development in the realm of environmental design and planning and her conviction that energy conservation is an interdisciplinary challenge. The study consists of three parts: 1) a theoretical study in which writings from multi-disciplines were examined for their potential to make a contribution to the conservation of energy; 2) a methodological study to develop an instrument to evaluate consumer acceptance of energy conserving innovation, INOVAC; and 3) an experimental field study, in which an energy conservation education program was delivered to consumers and whereby they were evaluated on the meanings they ...

The Effect Of Dietary Protein And Calorie Restriction On Growth, Kidney Function, And Survival Of Male Rats, Teresa Ann Davis Aug 1980

The Effect Of Dietary Protein And Calorie Restriction On Growth, Kidney Function, And Survival Of Male Rats, Teresa Ann Davis

Doctoral Dissertations

(From the Introduction): One of the primary goals of nutrition research is to determine the levels of various nutrients which are needed to promote rapid mental and physical growth, optimal physiological performance during maturity, and the retention of good health during old age (1). It is generally considered that the intake of nutrients at levels moderately above those required for maximum rates of growth and development are optimum for the well-being of an organism. However, it has been shown that life span can be increased and the age-associated decline in physiological function delayed in experimental animals fed diets containing lower ...

Parent-Child Relationships And Self Concept: A Comparison Of Children From Divorced And Intact Families, Korrel Woody Kanoy Jun 1980

Parent-Child Relationships And Self Concept: A Comparison Of Children From Divorced And Intact Families, Korrel Woody Kanoy

Doctoral Dissertations

Understanding the impact of divorce on children becomes more vital each year because of the increasing number of children who experience parental divorce. Although there is substantial literature on divorce, inconclusive findings exist because (a) not enough researchers have compared children of divorced families to children from intact families, (b) divorce is often viewed as a single event rather than a process involving many variables, and (c) few researchers have examined post-divorce relationships among family members as in important predictor of adjustment to divorce. Therefore, the purpose of this study was to compare children from divorced and intact families with ...

Midmanagement And Entry Level Fashion Merchandising Competencies , Kathleen Greenley Beery

Retrospective Theses and Dissertations

The public has been increasingly demanding accountability from educational institutions over the past 20 years. In occupational programs, business representatives expect graduates to possess certain knowledge and skills and graduates expect to be well-prepared when they enter the job market. Thus, the curriculum development process has become very complex. Using competencies, which are based on occupational roles, to develop curricular content is one method to enhance the accountability of a program; The main purpose of this study was to determine which competencies were perceived as important for entry and midmanagement positions in fashion merchandising. Variability in response was examined between ...

Reasons For Participation In Clothing Construction Classes , Edna Riley Bell Mount

Retrospective Theses and Dissertations

This research was designed to determine why adults attend beginning clothing construction classes, if adults would select beginning clothing construction classes if other courses were available, and if selected variables are related to adult motives. One hundred ninety-nine adults enrolled in beginning clothing construction classes in Iowa public schools or the area community colleges responded to questionnaires which contained 63 reasons for enrolling in the class. Response rate was 91 percent;Factor analysis procedures identified six clusters of interrelated items from 50 of the 63 items. An inspection was made to determine items with a factor loading of equal to ...

The WIQ was designed from literature search, review of established instruments, and input from faculty and students. The WIQ was administered to 437 junior and senior students in ...

Impact Of Iowa Secondary Vocational Home Economics Programs With Emphasis On Consumer Education , Glinda Carol Crawford Jan 1980

Impact Of Iowa Secondary Vocational Home Economics Programs With Emphasis On Consumer Education , Glinda Carol Crawford

Retrospective Theses and Dissertations

The purpose was to determine participant outcomes of Iowa secondary vocational homemaking programs with emphasis on consumer education. Objectives were to assess program impact on selected cases, describe former participant consumer responsibilities and practices, determine consumer outcomes resulting from participation, determine student recommendations for consumer outcomes;A stratified random sample of homemaking programs was drawn. One teacher from each program was instructed to randomly select two senior students: one with three or more semesters of homemaking from grades nine through 12 and one with no homemaking during that time but with similar socioeconomic status, grade point average, and sex;The ...
